Finca Las Trincheras, located in the municipality of Tlaltetela, Veracruz, spans 100 hectares, with 40 dedicated to coffee cultivation at an average altitude of 1,340 m.a.s.l. Its varieties include Caturra, Garnica, Pacamara, Bourbon, Geisha, Oro Azteca, and Sarchimor, grown under the shade of trees such as chalahuite (Inga jinicuil) and huizache (Acacia oennatula). Acquired in 1989 by José Cienfuegos García, the farm has earned international recognition, including an award in the 2019 Cup of Excellence with a Pacamara lot from the highest section of the farm, at 1,400 m.a.s.l.
This Garnica lot was processed using the washed method at the APG wet mill. Fully ripe cherries are received, weighed, and carefully analyzed for quality.
Combining traditional techniques with modern technology, the coffee is pulped, fermented, and washed with clean water before being dried in mechanical dryers (guardiolas) at stable, controlled temperatures. This meticulous approach ensures a uniform parchment, extended shelf life, and a clean, bright cup profile.
