Finca El Triunfo is located in Palermo Huila, Colombia and run by Audon Solano. The farm sits at an elevation of approximately 1,800 m.a.s.l. and consists of 26 hectares in total. This particular lot is made up of Caturra, but Audon also grows Colombia (roughly 4,000 treees of Caturra and 10,000 trees of V. Colombia).
The coffee is fermented for 24/36 hours, meaning the coffee is first fermented in cherry for 24 hours and then de-pulped and fermented in the tank for an additional 36 hours. Audon was introduced to us by another producer in Palermo, whom we have worked with for 2 years now and an example of how the project is attracting producers not only from Santa Maria, buy from nearby municipalities.
This is our first year working with Audon and we are super excited for future harvests. This is also his first year entering the specialty market and is open to see how he can improve quality with his other varieties as well.
